"Why do you fresh mill your flour?"
Because the flour matters just as much as the recipe.
Modern flour is often milled weeks or even months before it's ever baked into bread. During that time, the natural oils found in the wheat germ begin to break down. To improve shelf life, most commercial white flour also removes the bran and germ entirely, leaving only the starchy endosperm.
Fresh milling is different.
We mill whole organic grains just before mixing our dough. Every loaf contains the entire grain, including the bran, germ, and endosperm, exactly as nature designed it.
That means our bread naturally contains more fiber, more vitamins, more minerals, and more beneficial plant compounds than bread made with refined white flour. It also retains the healthy fats found in the wheat germ that are removed from most commercially produced flour.
Freshly milled flour simply hasn't had months to sit on a shelf.
The result is bread with a richer flavor, a fuller texture, and ingredients that are closer to the way God created them.
We don't fresh mill because it's trendy.
