Baking with Honey Instead of Refined Sugar

Walk through our bakery on almost any baking day and you'll find a jar of local honey sitting on the counter.

It's one of the ingredients we reach for most often.

That's not because we believe refined sugar has no place in a kitchen. There are recipes where it's simply the right choice. But whenever it makes sense, we prefer to bake with honey.

For us, it's a simple decision rooted in the kind of food we want to serve.

Honey is a natural sweetener that's been enjoyed for thousands of years. Unlike refined white sugar, which is heavily processed, honey comes to us much closer to the way it was created. It contains naturally occurring enzymes, antioxidants, trace minerals, and plant compounds that are lost during the refining process used to make white sugar.

It also tastes better.

Honey adds a gentle sweetness with subtle floral notes that pair beautifully with fresh-milled flour, butter, oats, cinnamon, and fruit. It gives baked goods a little more depth without making them overwhelmingly sweet.

Another benefit is that honey attracts and retains moisture, helping breads, muffins, and cookies stay soft a little longer.

That doesn't mean we avoid sugar altogether.

We simply try to make thoughtful choices about every ingredient that goes into our kitchen. Whenever we can use an ingredient that's less processed and brings both flavor and nutritional value, that's usually the direction we'll choose.

It's the same reason we fresh-mill our flour, use pasture-raised eggs, and bake everything in small batches.

None of these choices are shortcuts.

In fact, most of them require more work.

But we believe the extra effort is worth it because good food starts with good ingredients.
